Behind the ceremonial label
- 1. First harvest, top shoots only. Spring's first flush, hand-picked from the youngest top leaves, which gives the best quality. Shaded for 3 to 4 weeks first for a deeper green and sweeter umami.
- 2. Steamed into tencha. Steamed right after picking to lock in colour, then dried and de-veined.
- 3. Stone-ground, sealed fresh. Slow granite milling keeps heat off the leaf. The fine powder is sifted and sealed against air and light.
“Smooth, no bitterness at all. It whisks up creamy every single time.”
“Colour is so vibrant, my iced matcha latte looks like it came from a café.”
“We switched our café's ceremonial matcha to this and customers noticed.”
“Fresh, grassy and sweet. Shipped fast and the tin sealed perfectly.”
“Finally a ceremonial grade I can afford to drink every morning.”
“Rich umami, a little nutty. The Shima is my favourite for usucha.”
